Syllabub was a drink or a custard-like dessert, made of milk or cream, curdled with wine or cider, and sometimes sweetened and flavored with lemons. It may have been served in glasses like these, set upon a glass salver. The glasses are decorated with the familiar Derby-West grapevine motif and are engraved with the initials of Nathaniel and Elizabeth Derby West.
